It's a beautiful morning...

What a day I’ve been given today…
Living back at home brings some added responsibilities, such as caring for the dog while my stepfather is in the deer woods and my mom is out of town on business. Dogs apparently don’t like to pee in the rain, so my morning was off to a great start. Driving to work under a severe thunderstorm warning, my wipers pushed back the spray from the car in front of me to reveal it as a GMC Suburban sporting a little silver fish and a gargantuan Bush/Cheney yard sign in the back window. Taped above the yard sign was a large white sign stating in bold red lettering “The Only Christian Vote”. I thought about flipping them off, but thought better of it when I realized that a. it wouldn’t send the right message and b. they probably wouldn’t be able to see me anyway through the gigantic obstruction in their back window.

So I make it to my parking lot and pull into my space, only to realize that my umbrella was not in its proper place beneath my passenger seat. I called my boss and asked her if she could meet me downstairs to trade off an umbrella for my bowl of boiled potatoes (which I had not had time to turn into potato salad). After our exchange, I drove back to the parking lot and proceeded on my walk to the building, bag of potato salad fixings in one hand, wimpy umbrella in the other. I am now at work, 15 minutes late and soaked up to my knees.

I can say however, that despite the externals, my spirit is joyful within me. I suppose that speaks volumes above having a good day and a heavy heart.

So glad that you made it to work all safe and sound ~ sorry that you got all soak, though!
The sirenes went off here, for a tornado warning ~ and I already got excited but the Torando/storm wasn't even close to the Hillcrest area! :-(

*disclaimer if Ramon is reading: of course my potato salad is not this easy to make ~ it only tastes fabulous if I add my special touch, and you should continue to marvel at my potato salad artistry*

Now, on to the "recipe". Since I normally only bother with making potato salad for "events", I always just buy a five pound bag of idaho potatos and boil them all. I wash them and leave the skin on, but you can rub it off after they are boiled if you prefer them naked. Potatos take a long time to boil, so I quarter them to save some time. Place the potato quarters in a large pot, cover with water, and boil them until you can stick a fork all the way into them. Transfer the potatos to a large bowl, and use a knife to cut the quarters into smaller chunks (they don't have to be too small, b/c they are going to mash some as you add the ingredients). After that, its really quite as simple as making tuna fish ~ stir in miracle whip, dill pickle relish, a little bit of mustard, salt and pepper to taste and until moist (for a 5lb bag it takes most of the miracle whip jar). voila! I'm such the chef! Oh ~ you can add hard boiled eggs and/or chopped scalions if you want a little something extra, but I don't like onions and some people don't like eggs.

Disclaimer accepted...I could never lose my wonder at your fine potato salad and baked bean dishes. As for your friend who mentioned Whole Hog Café...um, yeah, I think they have the best potato salad I've ever had. In case I'm in the Twilight Zone, and my grandmother is reading this, I have to level with you Granny and say that Whole Hog's potato salad is even better than yours. But, yours is mustard based, so maybe I don't need to make that distinction. I'm having a conversation with my grandmother who is not really reading this. Geez...
